Upton’s Naturals Vegan Chorizo Tacos
Upton’s Naturals has a wonderful meat alternative known as seitan. I happily use this brand of seating for a meatless meal, it was so great I didn’t even miss the meat! Had lots of leftovers so I was able to add this to a variety of other meals to add volume. It was also great as a salad topper, breakfast skillet and a soup add-in. Upton’s seitan comes in several flavors and is cholesterol, oil and GMO free.

Ingredients
- 1 package Upton's Naturals Chorizo Seitan
- 2 large potatoes, chopped
- 1 tbsp coconut oil
- 1 medium white onion
- 2 cloves garlic, minced
- 4-6 homemade tortillas
- mexican caviar salsa

Instructions
- Boil potatoes until tender, drain and pat dry.
- Heat oil over medium/high heat, sauté onions and potatoes until outside of potato or brown and crispy.
- Unwrap seitan and place in pan. Break into bite size pieces or as fine as you would like. Cook over medium heat to warm the setain, it is fully cooked out of the package.
- Serve mixture on a warmed tortilla topped with Mexican Caviar Salsa and any of your favorite toppings.
