Upton’s Naturals Sausage and Spinach
I love being able to make vegan versions of classic foods that I’ve grown up with. With the help of Upton’s Naturals Italian Seitan, I recreated and tweaked my Dad’s sausage and spinach recipe.
Usually he would serve this mixture in a hard roll, but I preferred to make it a bit healthier and place it upon a bed of brown rice with peas.
Upton’s Italian Seitan is pre-seasoned and pre-cooked, so essentially you just need to warm it up. It is cholesterol, oil and GMO-free and available in several other flavors.

Ingredients
- 2 cups cooked brown rice
- 1 cup frozen peas
- 1 tablespoon coconut oil
- 1-2 garlic cloves, minced
- 8 ounces frozen chopped spinach
- 1 - 8 ounce package Upton’s Naturals Italian Seitan
- spicy brown mustard optional

Instructions
- Prepare brown rice to package directions, add peas during the last two minutes of cooking.
- While the rice is cooking, sauté garlic in oil then add spinach.
- Once spinach is softened/defrosted, add seitan while breaking it into chunks.
- Combine spinach and seitan, top rice with mixture.
- Garnish with spicy brown mustard.
